Spiced crab salad

Serves 4 as a main

Ingredients

450g | 1lb cooked white crab meat

1 medium red onion, peeled, halved and very finely sliced

3 medium tomatoes, peeled and finely sliced

10cm | 4inch piece cucumber, seeds discarded and finely diced

1 tablespoon chopped fresh coriander

1 green finger chilli, very finely chopped

grapefruit, juice

2 teaspoons salt

teaspoon Mustang masala or *freshly ground black pepper

50 ml| | 3 tablespoons vegetable oil

Method

In a small bowl mix together the salt and mustang masala or black pepper to make a salt rub.

In a large mixing bowl gently mix the crab meat, red onion, tomato, cucumber, coriander and chilli. Sprinkle the salt rub and grapefruit juice over the salad and gently stir to make sure everything is covered with grapefruit juice and salt.

To serve

Sprinkle the crispy chicken pieces over the top of the salad. Perfect with mixed green and watercress salad leaves

Chicken - turkey, duck, mackerel

Mustang masala - freshly ground black pepper

Grapefruit juice - juice of 1 lime
