Green Mango Salsa

Ingredients
1 green mango
1 small green chilli
1 lime
tablespoon finely grated ginger
1 teaspoon salt
3 sprigs of fresh mint
Method
Finely grate the zest from the lime and squeeze the juice into a small bowl with the ginger. Split the chilli in half and remove the seeds. Chop very finely and add to the lime.
Peel the mango and remove the flesh from the stone, grate the mango flesh on a course greater and place in a mixing bowl. Pull the mint leaves from the stalks and throw the stalks away, chop the mint roughly, sprinkle over the grated mango with the lime dressing, mix well and taste to check for salt. Serve immediately.

Notes
- Green mangos are readily available in supermarkets, choose the greenest and hardest mango you can find, ripe mangos simply won't work for this
- Add 2 cups of fresh beansprouts and mix well for a lovely refreshing side salad for 4
